Chicken in a creamy, spicy curry sauce. Served over rice makes a tasty meal with a kick. I suggest a good spicy curry. Serve with a mango chutney for added flavor.

Recipe Ingredients for Curried Chicken over Rice

1 lb chicken breast
1 tbls Smart Balance spread
1 onion chopped
1 clove garlic
3 tbls flour
3 tbls curry
1/2 tsp cumin
1 cup apple, chopped
1 cup chicken broth
1/2 cup coconut milk
1/2 cup evaporated skim milk
2 cups cooked rice

Recipe Directions for Curried Chicken over Rice

  1. Brown Chicken and set aside

  2. saute onions and garlic in butter

  3. add spices and let heat for about 2 minutes

  4. add flour until blended

  5. add chicken broth, coconut and evaporate milk until smooth and creamy

  6. add cooked chicken and chopped apple

  7. Mix and let heat through

  8. Serve over rice w/avacodo or mango chutney
