A crisp, refreshing cold salad that makes a great lunch or light dinner.

Recipe Ingredients for Curried Chicken & Mango Salad

1 lb. chicken breasts, cooked
1/2 cup plain low-fat yogurt
2 tbsp. jam (mango)
1 tbsp. fresh lime juice
1 tsp. curry powder
1 mango, diced 1/4 inch
1 medium Granny smith apple, diced 1/4 inch
1/2 cup celery, diced 1/4 inch
1/2 cup cilantro leaves, chopped

Recipe Directions for Curried Chicken & Mango Salad

Dice chicken into bite-size pieces. Toss lightly with remaining ingredients. Serve on bread, toast, or over lettuce leaves (I use bagged Dole "Spring Mix" greens).
