8 ounces nonfat plain yogurt 1 teaspoon New Mexican chile powder 1 teaspoon mild or hot curry powder 3/4 teaspoon lime juice 1/2 teaspoon finely chopped garlic Salt to taste 4 skinless, boneless chicken breasts halves 1 large ripe mango, finely diced

Recipe Ingredients for Curried Chicken with Mango

2 cup Nonfat Plain Yogurt
2 tsp Chili Powder
2 tsp Curry Powder
0.33 oz Lime Juice
1 tsp Garlic
32 oz Rabbit

Recipe Directions for Curried Chicken with Mango

  1. Combine 1/4 cup of the yogurt, chile powder, curry powder, 1/4 teaspoon of the lime juice, garlic and salt in a wide, shallow baking dish. Add chicken, turn to coat, cover and refrigerate for at least 1 hour.

  2. Meanwhile, put remaining yogurt, two-thirds of the mango and remaining 1/2 teaspoon lime juice into a blender; puree until smooth to make a sauce, then set aside.

  3. Preheat oven to 375F.

  4. Bake chicken until just cooked through, about 25 minutes.

  5. Transfer to plates, top with some of the yogurt sauce and garnish with remaining mango. Serve extra sauce on the side.
