Curried Chicken with Brown Basmati Rice and Lite Coconut Milk

Recipe Ingredients for Curried Chicken in Lite Coconut MIlk

5 oz Chicken
0.25 cup Lite Coconut Milk
0.25 oz Whole Wheat Flour
0.25 serving Vegetable Bouillon
2 tbsp chopped Onions
1 stalks Celery
0.5 cup, chopped Carrots
0.25 cup, chopped Peppers, Sweet, Green
1 tsp Pepper, Red Or Cayenne
2 tsp Curry Powder
0.25 oz Pine Nuts
0.25 cup Rice, Brown, Medium-grain
2 1tsp Olive Oil

Recipe Directions for Curried Chicken in Lite Coconut MIlk

Saute onion, celery and carrot in oil, add spices, add flour, stir a few minutes. Slowly add coconut milk and veggie bouillon with 1/2 C water, stir until smooth. Pour over chicken breast in baking dish, Bake for 40 minutes at 350. Meanwhile, cook rice in rice cooker or stovetop (about 40 min.). Serve chicken and sauce over rice with a green salad.
