Curried Chicken W/ Eggplant Recipe

Really YUMMY! The recipe is from Eating Well.com, but it uses salmon instead of chicken. I went chicken because we'd just had salmon, but will try the salmon as well. (Salmon recipe called for fish sauce, but I omitted it since I didn't cook the fish.) I made my own curry powder because I realized I didn't have it - mix equal parts corriender, cumin, fennel and tumeric and add a small amount of allspice. The sauce is perfect over jasmine or basmati rice. This can easily be made vegetarian if you substitute the chicken for chickpeas.

Recipe Ingredients for Curried Chicken w/ Eggplant

15 oz Chicken Breast Tenderloins
1 tablespoon extra virgin olive oil
14 oz Reduced Fat Coconut Milk
1 medium eggplant, diced
2 cups sugar snap peas
1/2 small onion, diced
2 cloves garlic, minced
1 tablespoon curry powder
3 tablespoons lime juice
1 tablespoon dried basil

Recipe Directions for Curried Chicken w/ Eggplant

  1. Cook rice according to package directions.

  2. Place chicken tenders in a medium pot and cover just enough with water. Bring to a boil and poach until chicken is no longer pink. Remove from heat and set aside.

  3. Meanwhile, heat oil in large skillet over medium-high heat. Add onions, garlic and curry powder and cook, stirring until fragrant, about a minute.

  4. Add eggplant and toss to coat. Cook about 2 minutes, stirring frequently then add cocounut milk and snap peas and bring to a boil.

  5. Carefully stir in partially-cooked chicken tenders. Return to boil, then reduce heat, cover and simmer until chicken and peas are cooked through, about 5-10 minutes depending on chicken.

  6. Remove from heat and stir in basil and lime juice. Serve over hot cooked rice.
