Recipe Ingredients for Curried Chicken and Cauliflower

1 teaspoon olive oil
8 oz boneless, skinless chicken breast
1/2 c onion, chopped
1 garlic clove
1 tsp curry powder
1/2 t cumin
1/2 tsp cinnamon
1 1/2 c butternut squash, cubed
1 1/2 c cauliflower, cubes
1/2 c chicken broth
1 c diced tomatoes

Recipe Directions for Curried Chicken and Cauliflower

  1. Saute chicken, onion and garlic in oil until almost done.

  2. Add vegetables, spices and broth, cook for about 15 minutes until veggies are tender.
