Recipe Ingredients for Curried Chicken Casserole

3 lbs cooked chicken, cut into bite-sized pieces
1 lb broccoli, stems removed and cut into florets
1 cup mayonnaise
2 cans cream of mushroom soup
1 T minced garlic
2 tsp curry powder
2 T lemon juice
1 cup bread crumbs
4 tbsp unsalted butter, melted

Recipe Directions for Curried Chicken Casserole

  1. Preheat oven to 350, and set rack in middle of oven.

  2. Combine chicken and broccoli in large bowl.

  3. In a medium bowl, combine mayo, soup, garlic, curry, and lemon juice.

  4. Pour over chicken mixture and stir to combine.

  5. Transfer to large casserole dish. Top with bread crumbs and drizzle with butter.

  6. Cover with foil and bake about 1 hour. Remove foil and bake another 10 minutes.

  7. Serve with steamed rice.
