Recipe Ingredients for Curried Chicken & Cashews

0.33 cup Natural Goodness Chicken Broth
3 oz Water
1.5 tbsp Fish Sauce
1 tsp Sugars, Granulated
0.529 oz Rice Vinegar
12 oz Chicken
2 tbsp Olive Oil
1.5 cup chopped Red Onion
1 oz Ginger Root
1 clove Garlic
1 tsp Curry Powder
1/4 cup Red Chile
2.75 oz Cilantro
0.25 cup, halves and whole Cashew Nuts, Dry Roasted
3 cup Rice, White, Short-grain

Recipe Directions for Curried Chicken & Cashews

  1. To prepare sauce, combine chicken broth, water, fish sauce, sugar, and rice vinegar; set aside.

  2. Cut chicken across grain into 1/4 in slices; cut slices into 1/2 wide strips. Cut strips into 3 in long pieces.

  3. Heat a 14 in wok over high heat. Add 1 tbsp oil to wok, swirling to coat. Add half of chicken to wok; stir fry 2 minutes. Spoon cooked chicken into bowl. Repeat procedure with 2 tsp oil and remaining chicken.

  4. Add remaining 1 tsp oil to wok, swirling to coat. Add onion, ginger, and garlic; stir fry 1 minute or until lightly brown. Add curry powder and chiles; stir fry 30 seconds. Add sauce and chicken; stir fry 1 minute. Spoon into a serving dish. Add cilantro and cashews. Serve over rice.
