Recipe Ingredients for Curried Chicken with Brown Rice

1 1/2 lbs chicken legs
3 tablespoons curry powder
1 large spanish onion
4 cloves garlic
1/4 cup crystallized ginger chopped
1/4 cup raisins
1 tablespoon brown sugar
1 tablespoon unbleached flour
2 cups water
4 grams Chicken Bouillon Cubes Herb Ox (1 cube)
2 cups cooked brown rice

Recipe Directions for Curried Chicken with Brown Rice

  1. Thaw chicken quarters in microwave from frozen state

  2. Heat raisins covered in water in a small custard cup in microwave for 1 minute 30 seconds to plump raisins

  3. Brown chicken in large skillet

  4. Add 2 cups water and bouillon cube

  5. Reduce temperature to medium heat

  6. Crush garlic cloves and add to skillet

  7. Chop onions and add to skillet

  8. Chop crystalllized ginger and add to skillet

  9. Add brown sugar, raisins, and curry powder

  10. Cook on medium heat until chicken is tender and is falling off the bone.

  11. Take 1/4 cup liquid from mixture and place in custard cup

  12. Stir flour into custard cup of liquid to make a thin flour paste

  13. Stir flour paste into skillet with the chicken and cook a few more minutes until liquid thickens into a sauce.

  14. Serve over warm brown rice.
