A mild curried chicken with red peppers, onions and mushrooms over wild rice.

Recipe Ingredients for Curried chicken breasts with red peppers and wild rice

2 chicken breast (skinless bone less)
1 red pepper
1 c chicken broth
1 c wild rice
3/4 c fat free yogurt (vanilla or plain)
1/2 c skim milk
1/2 onion
1/2 c mushrooms
1/2 c celery
1/4 c craisins
2 cloves garlic
1 tbsp butter
1 tbsp olive oil
1 tbsp rice wine vinegar
2 tsp curry powder
1/2 tsp crushed red pepper
1 dash season salt

Recipe Directions for Curried chicken breasts with red peppers and wild rice

  1. Cut chicken breasts in 1/2 inch cubes

  2. In a marinade container combine:

  3. 2 tsp curry powder

  4. 1 tbsp rice wine vinegar

  5. dash seasoning salt

  6. Diced chicken breasts

  7. Cover and marinade as long as possible (1 hour minimum, but preferably overnight)

  8. 1 hour before serving:

  9. Start preparing rice by package instructions

  10. Chop all medium size:

  11. Red pepper

  12. Onion

  13. Celery

  14. Slice:

  15. Mushrooms

  16. Dice:

  17. Garlic

  18. In a large skillet over medium-low heat combine

  19. Olive oil

  20. Butter

  21. Celery

  22. Onion

  23. Sweat about 10 minutes

  24. Add red pepper

  25. Sweat about 5 more minutes

  26. Add mushrooms

  27. garlic

  28. Sprinkle with crushed red pepper and

  29. Sweat about 5 more minutes

  30. In a mixing bowl, combine chicken broth, milk and yogurt and chicken with marinade

  31. Raise heat to medium and add chicken and broth mix to skillet

  32. Simmer for 10-15 minutes stirring only as necessary to cook chicken

  33. Serve in a large bowl with rice topped with chicken, vegetables and broth
