Modified from Portland's Palate Make this on the weekend and then refrigerate. Take it out for a weekday dinner and bake. Serve with a colorful salad and steamed broccoli.

Recipe Ingredients for Curried Chicken and Artichoke Bake

4 cups spinach, finely chopped
1 cup brown rice
12 ounces artichoke hearts
1 red bell pepper, diced
1 1/2 cups cooked chicken
1 cup Monterey Jack cheese, shredded
2 cloves garlic, minced
1/4 pound fresh mushrooms, sliced
2 tablespoons olive oil
2 tablespoons all purpose flour
2 tablespoons curry powder
1 tablespoon mustard
2 cups milk

Recipe Directions for Curried Chicken and Artichoke Bake

  1. Cook the brown rice according to package directions.

  2. Cover the diced chicken with water and bring to a boil. Simmer for about 10 minutes until the chicken is cooked through.

  3. Place chopped spinach in a Pyrex container. Splash with water and cover with Saran wrap; place in microwave to steam for 3 minutes.

  4. Dice the red bell pepper and cut the artichoke hearts into bite-sized pieces. Shred the cheese.

  5. Mince the garlic. Slice the mushrooms.

  6. Sauté the olive oil, garlic and mushrooms in a saucepan for about 5 minutes until the mushrooms are soft.

  7. Add the flour, curry powder and mustard. Saute for 1-2 minutes.

  8. Add the milk slowly. Stir well and simmer until thickened, about 5 minutes.

  9. Spray a 9x13 casserole dish with cooking spray.

  10. Mix the cooked brown rice and steamed spinach. Place in the bottom of the casserole dish. Top with artichoke hearts, bell pepper, chicken and cheese.

  11. Top with the curry sauce.

  12. Bake at 350 degrees for 45 minutes or 1 hour if it is chilled.
