Recipe Ingredients for Curried Chick Peas and Tofu

1 onion, chopped
1 garlic clove, minced
2 tbsp vegetable oil
2 tsp ground cumin
1 tsp ground coriander
1/2 tsp turmeric
1/4 tsp black pepper, ground
1/8 tsp cayenne
3/4 lb tofu
16 oz chick peas, undrained and cooked
2 tomatoes, chopped

Recipe Directions for Curried Chick Peas and Tofu

  1. Saute the onion and garlic in the oil until the onions are translucent, stirring occasionally. Stir in the cumin, coriander, turmeric, black pepper, and cayenne. Add the tofu, cubed, and cook for a minute or so, stirring constantly. Add the chick peas and about 1/2 cup of their liquid (from the can), and simmer for 5 minutes. Add the tomatoes and continue to cook until thoroughly heated. Add salt to taste.

  2. Serve topped with cilantro and/or yogurt if you like.
