Recipe Ingredients for Curried Chick Peas

2 serving Extra Virgin Olive Oil
30 oz Garbanzo Beans (Chick Peas), Organic
1 cup chopped Red Onion
2 clove Garlic
20 oz Crushed Tomatoes

Recipe Directions for Curried Chick Peas

  1. 2 tbsp olive oil

  2. 1 yellow or red onion, diced

  3. 2 clove of garlic, minced

  4. 2 - 15oz canned of chick peas, drained

  5. 20 oz crushed tomatoes

  6. 1 cup water

  7. 1 1/2 tbsp curry powder

  8. 1 tsp salt

  9. 1 tsp red pepper flakes

  10. 1/2 bunch cilantro

  11. Dice the onion and mince the garlic. Cook the onion and garlic in a large pot with olive oil over medium heat until softened (3-5 minutes).

  12. Drain the canned chick peas and add to the pot. Also add the tomato sauce, water, salt, red pepper flakes and curry powder. Stir the pot until everything is evenly mixed. Bring the mixture up to a simmer over medium heat.

  13. While the chick peas are simmering, rinse the cilantro and pull the leaves from the stems. Roughly chop the leaves and add them to the pot. Give everything a stir and continue to simmer until the sauce has reduced to a thick consistency (about 20 minutes total). Stir the pot every few minutes to prevent the sauce from burning and sticking to the bottom.

  14. Enjoy as a side dish or over basmati rice.
