Recipe Ingredients for Curried Celery Soup with Apple

1 serving Pure Vegetable Oil
1 large Onions
1 carrot Carrots
6 stalks Celery
2 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin, Baked
2 serving Garlic Cloves
1 medium (3") Apples
4 serving Chicken Broth
4 tsp Curry Powder
2 serving Ground Cumin
2 Teaspoon Thyme
3 tsp Salt

Recipe Directions for Curried Celery Soup with Apple

  1. Sauté the onion, carrot and celery in some vegetable oil for about 10. Add the potatoes, sauté for another 5 minutes. Add the garlic, the apple and the spices, continue to sauté for a few more minutes.

  2. At this point add the broth, scrape the bottom of the pan and bring to a simmer. Cook for another 10 minutes and then add the celery leaves and cook for another 5 minutes. Now blend the soup (or parts of it if you like chunks.) Salt and pepper to taste and serve.
