Company's Coming Slow Cooker recipe. Recipe makes 8 cups.

Recipe Ingredients for Curried Cauliflower Soup

1 tbsp olive oil
1 1/2 cups onion, chopped
1 cup carrots, chopped
1 cup celery, chopped
2 tbsp curry paste
2 cloves garlic
5 cups vegetable broth, low sodium
2 medium potatoes, peeled and cubed
1/4 tsp salt
2 1/2 cups cauliflower, chopped
1/2 cup plain yogurt
2 tbsp fresh parsley, chopped (or cilantro)

Recipe Directions for Curried Cauliflower Soup

  1. Heat oil in large fry pan over medium heat. Add next 3 ingredients. Cook for 5 to 10 minutes, stirring often, until onion is softened.

  2. Add curry paste and garlic. Heat and stir for about 1 minutes until fragrant. Transfer to 3.5 to 4 L slow cooker.

  3. Add next 3 ingredients. Stir. Cook, covered on Low for 8 to 10 hours or on High for 4 to 5 hours. Carefully process with hand blender or in blender until smooth.

  4. Add cauliflower and yogurt. Stir. Cook, covered, on High for about 45 minutes until cauliflower is tender-crisp.

  5. Add parsley (or cilantro). Stir. Makes about 8 cups (2L).
