A curried "rice" recipe for people who are allergic to rice.

Recipe Ingredients for Curried Cauliflower "Rice"

1 head, large (6-7" dia) Cauliflower
2 cup Beans, Snap, Green
2 cup, grated Carrots
3 tsp Becel Regular Margarine
1 cup Vegetable Broth
1 tsp Curry Powder
1 tsp Cinnamon, Ground
1 tsp Cumin
1 tsp Paprika

Recipe Directions for Curried Cauliflower "Rice"

  1. Take cauliflower and peel leaves off and core the bottom of it out. Do not cut the florets off.

  2. In a large pot with a lid add the cauliflower and the broth along with the spices. Steam the cauliflower on medium high heat until it is easily cut with a butter knife.

  3. Transfer whole head of cauliflower along with broth and spices into a food proccessor and pulse until the consistency of rice and transfer back to pot.

  4. Add margarine, green beans and carrots and stir fry until the beans are cooked tender.
