Recipe Ingredients for Curried Cauliflower With Chickpeas

2 tbs olive oil
1 onion
2 garlic cloves
4 tbs curry paste - medium
1 head,+small+4"+dia cauliflower
4 tomatoes
400 g chickpeas

Recipe Directions for Curried Cauliflower With Chickpeas

  1. Heat Oil in pan, add onion and garlic til soft and begin to brown, stir in curry paste, add cauliflower and stock and bring to boil. Reduce Heat, cover and simmer for 10 mins.

  2. Add the tomatoes, chickpeas and chutney (if using) and continue to cook uncovered for 10 mins, season if req. serve garnished with coriander and yoghurt if using.
