Recipe Ingredients for Curried Cauliflower with Black Beans

4 tsp oil
1 tsp curry powder
1/2 tsp ground cumin
1/2 tsp ground coriander
1 head cauliflower
1/2 cup water
1/2 tsp red pepper flakes
19 oz can black beans, drained
10 oz can diced tomatoes (I like to use Rotel)
2 tbsp fresh cilantro

Recipe Directions for Curried Cauliflower with Black Beans

  1. Heat the oil in a large skillet over med-high heat. Add the curry powder, cumin & coriander, stirring constantly, until fragrant, 10-15 seconds.

  2. Add the cauliflower, 1/4 cup of the water and red pepper; cook, stirring occasionally, until the cauliflower is well coated and nearly all of the liquid evaporates, 3-4 minutes.

  3. Add the tomatoes (I like Rotel because it adds spiciness-plain diced tomatoes are fine) and the remaining 1/4 cup water; cook, covered, stirring occasionally, until slightly thickened, about 10 minutes.

  4. Gently stir in the beans; cook until heated through, 2-3 minutes.

  5. Sprinkle with fresh cilantro, before serving.
