Recipe Ingredients for Curried Cashew Couscous

1 cup couscous
1 vegetable bouillon cube
8 oz peas
2 tbsp peanut oil
1/2 cup cashews
1 tsp curry powder
1 tsp fresh ginger, minced
1/2 tsp turmeric
1/2 cup raisins
2 scallions, thinly sliced
1 salt, to taste
1 pepper, to taste

Recipe Directions for Curried Cashew Couscous

  1. Combine the couscous with 2 cups of water and the bouillon cube in a large wok or skillet. Bring to a simmer, then cover, and let stand off the heat for 5-10 minutes, or until the water is absorbed.

  2. Add the remaining ingredients, stir together well, then cook, stirring frequently, for 2-3 minutes longer.
