Recipe Ingredients for Curried Carrot and Sweet Potato Soup

2 tsp olive oil
1 medium onion
2 tsp cumin
2 tbsp curry powder
1 lb carrots, raw
1 lb sweet potatos, raw
4 cups chicken broth

Recipe Directions for Curried Carrot and Sweet Potato Soup

  1. Carrots can be baby, shredded, or sliced.

  2. Peel potatoes and cut into one inch pieces.

  3. Heat oil in large pot.

  4. Saute onions until soft.

  5. Add cumin and curry. Cook for 1-3 minutes longer.

  6. Add carrots, potatoes, and broth to pot.

  7. Bring to a boil, then cover and simmer until veggies are soft, about 20 minutes.

  8. Cool slightly, then puree in a blender. You can make soup smooth or slightly chunky.

  9. Serve warm.
