Recipe Ingredients for Curried Carrot Soup

1/2 onion
1 T. butter
1 T. olive oil
2 lb. carrots
5 c. chicken broth
1 T. curry powder
1/4 t. cayenne pepper

Recipe Directions for Curried Carrot Soup

  1. add butter and olive oil to soup pot over medium heat. chop onions and add to soup pot; cook until translucent.

  2. chop carrots into 2 inch pieces. add to soup pot. add chicken broth, curry powder and cayenne pepper. continue to heat on medium until soup comes to a boil. reduce heat to low, cover and simmer for 1 hour or until carrots are soft. puree with hand blender.
