Curried Carrot Soup Recipe

Blend of sweet and spice. Serve either hot or chilled.

Recipe Ingredients for Curried Carrot Soup

6 carrots
1 T butter
2 green onions
1 small apple
1 1/2 T curry powder
4 cups chicken broth
1/2 cup evaporated skim milk
1/8 t. black pepper

Recipe Directions for Curried Carrot Soup

  1. melt butter in heavy pan over medium heat.

  2. peel and slice carrots, onions, apple

  3. saute in butter for about 10 minutes

  4. add curry powder and cook 2 more minutes

  5. add broth and simmer 20 minutes

  6. puree in blender

  7. return to pan, add milk and pepper

  8. serve hot or chill 2 hours
