Mmm currie cabbage! Would be great served over rice or with other veggies added!

Recipe Ingredients for Curried Cabbage

1 head cabbage, chopped
1 1/2 cups green beans, cut
1 medium onion, chopped finely
2 cloves garlic, minced
1 tbsp curry powder
1/4 tsp salt
1/2 cup water
1/2 cup light soy milk
1 tbsp olive oil

Recipe Directions for Curried Cabbage

  1. Add just enough olive oil to coat the bottom of a large pot.

  2. Saute the onions and garlic on medium heat.

  3. Add cabbage, green beans, and water.

  4. Cover.

  5. Let sit until vegetables are tender, stirring occasionally.

  6. Add chopped cabbage and green beans.

  7. Add salt and curry powder to taste. (and any other desired spices).

  8. Add soy milk (or regular milk) to make a nice creamy texture.
