Recipe Ingredients for Curried Butternut Squash Soup

1 serving Extra Virgin Olive Oil
1 cup, chopped Onions
4 clove Garlic
1 tbsp Curry Powder
1 teaspoon Cumin, Ground
1/4 tsp Spices Cayenne Pepper
40 oz Squash, Winter, Butternut
3 cup Organic Chicken Broth
3 cup (8 fl oz) Water
16 oz Apples

Recipe Directions for Curried Butternut Squash Soup

  1. In a large soup pot over medium heat, heat olive oil. Add onion and saute until golden brown. Add garlic, curry powder, cumin, & cayenne pepper; cook stirring constantly 30 seconds. Add (peeled, seeded, halved lengthwise & sliced thin) butternut squash, chicken broth, water & apples. Bring liquid just to a boil; reduce heat to low and simmer, covered 25 minutes or until squash is tender. Remove from heat & let cool 15 to 20 minutes.

  2. Puree mixture in a blender or food processor, in batches and transfer back into soup pot. Season with salt & pepper to taste. Serve hot.
