Absolutely fabulous autumnal soup, from my mum's good friend on Vancouver Island. Perfectly delicate, and hearty as well.

Recipe Ingredients for Curried Butternut Squash Soup

2 tsp olive oil
1 onion, chopped
3 garlic cloves, finely chopped
1 tbsp curry powder
4 cups butternut squash, diced
4 cups water
2 cubes chicken stock

Recipe Directions for Curried Butternut Squash Soup

  1. Heat oil in large saucepan on medium heat. Add onion and garlic, and cook gently for 5-8 minutes, until fragrant. If mixture starts to burn or pan becomes dry, add a little water.

  2. Stir in curry paste and cook about 30 seconds.

  3. Add squash and cook for a few minutes. Add stock & water, and bring to a boil. Reduce heat, and cook gently for 30 minutes.

  4. Puree soup until smooth. Return to heat. Thin with some water, if necessary. Add salt if you wish! Delicious if served with a sprinkle of toasted almonds.
