This is a nice soup for a cold winters day. The texture complements the coconut milk in it and curry adds zing.

Recipe Ingredients for Curried Butternut Squash Soup

2 cups butternut squash (cubed)
2 small apples (cubed - I used MacKintosh apples)
1/2 tsp garlic, minced
1/2 tsp ginger, minced
1 tsp curry powder
1 tsp dried basil
2 tbsp vegetable oil
1 medium spanish onion (diced)
2 cup beef broth
1/2 cup coconut milk
1 salt and pepper to taste

Recipe Directions for Curried Butternut Squash Soup

  1. Preheat oven to 350. Toss the apple cubes and butternut squash cubes in 1 tbsp oil, some salt and pepper. Lay it out in a single layer on a baking sheet layered with aluminum foil. Bake for 30 mins or till soft.

  2. Heat the remaining vegetable oil in a pot or dutch oven. Add the onions to it and fry on a low heat till transparent.

  3. Add the minced ginger and garlic and curry powder fry some more. Add the apples and butternut squash and fry. At this point, you can also add the basil.

  4. Add the beef stock and the coconut milk and boil till you can mash the squash easily with a fork.

  5. Using an immersion mixer, blend the soup till you get a consistency you like. You can thin the soup with water if you like.

  6. Serve hot. Should be delicious with a dollop of lowfat sour cream or just some cilantro for garnish.
