You can also add 1 cup of diced carrots to the celery and onion. This is very good served with hummus and pita bread.

Recipe Ingredients for Curried Butternut Squash Soup

1 cup red lentils
4 cups butternut squash (cubed)
1 cup onion (diced)
1/2 cup celery (chopped)
1 tbs bay leaf (1 leaf)
2 tbs curry powder
1 tbs cumin
12 cup vegetable broth

Recipe Directions for Curried Butternut Squash Soup

saute the celery and onion. Add the vegetable stock and bay leaf, lentils and squash. Bring to a boil and simmer for about 12 minutes until the squash is barely tender. Add the spices and simmer 2 minutes more. Salt and pepper to taste.
