Recipe Ingredients for Curried Butternut Squash Soup

1 onion, chopped
1 tbsp. olive oil
1 tsp. curry powder
1 tsp. grated ginger
2 cups water
1 1/2 cups raw butternut squash cubes
3/4 cup cream of coconut
2 tbsp. cream of coconut

Recipe Directions for Curried Butternut Squash Soup

heat olive oil in a saucepan. add onion and fry for 5 minutes with the lid on. add curry powder and grated fresh ginger root. cook for 3 minutes more. add water and a large Knorr vegetable bouillon cube. add squash and cook with the lid on the pan until tender, about 30 minutes. add coconut cream and cool. pulse in a blender until smooth. Make 6 cups.
