Curried Butternut Squash Soup Recipe

This velvety soup is simple enough for a weekday meal, but sophisticated enough for a special occasion. For extra flavour, toss a handful of peeled garlic cloves in with the vegetables before roasting!

Recipe Ingredients for Curried Butternut squash soup

424 g butternut squash
297 g onion
2 vegetable stock cubes
1 1/2 teaspoons curry powder
1 pinch salt
1/2 teaspoon pepper

Recipe Directions for Curried Butternut squash soup

  1. Preheat oven to Gas mark 7/220║ (or 200║ fan oven) 425║ F.

  2. Place squash and onion (& garlic) in a large roasting pan or baking dish. Bake, uncovered, for 45 minutes, until squash is tender.

  3. Don't worry if some of the pieces get a bit browned - this will add to the roasted flavour of the soup.

  4. Remove from the oven. Tip into saucepan and add stock. Bring up to the boil, reduce heat and simmer for 15 minutes. Let cool about 15 minutes - DO NOT pour hot soup directly into food processor, or you risk it exploding. PureÚ in batches in blender or food processor.

  5. Toast curry powder in a small frying pan over low heat until fragrant, about 2 minutes - be careful not to burn it. Stir into pureÚd soup. Season to taste and divide between six bowls. Garnish with spring onions and serve, or freeze portions for later use.
