Curried Butternut Squash Recipe

Creamy, quick, low fat, and delicious

Recipe Ingredients for Curried butternut squash

3 c butternut squash
2 oz. onion
2 tbs butter
1 quart vegetable broth
8 oz coconut milk
2 tsp curry powder
1 tsp sugar

Recipe Directions for Curried butternut squash

  1. Cut squash in half and seed. Oil lightly and season and roast, at 400 degrees, open side down, on parchment paper, for 1 hour.

  2. Remove skin and mash.

  3. Grate 1/4 cup onion

  4. Add to 2 Tbs butter and cook until translucent

  5. Add curry and stir

  6. Add broth and bring to a simmer.

  7. Add the roasted squash and mix with an immersion blender.

  8. Blend until smooth

  9. Add the coconut milk and the agave nectar.
