Recipe Ingredients for currant scones

2 c whole wheat flour
2 tsps baking powder
1/4 tsp baking soda
1/4 tsp salt
6 tbsps butter
1/4 c honey
1/4 c yogurt, plain, non-fat
1/4 c egg beaters or 1 egg + 1 egg yoke
1 c currants
1/4 c egg whites or 1 egg white

Recipe Directions for currant scones

  1. Mix flour, baking powder, baking soda & salt together. Cut in butter until mixture resembles coarse crumbs.

  2. In another bowl, mix honey, yogurt & egg beaters. Mix well. Stir in currants.

  3. Add the wet ingredients to the dry ingredients slowly, mixing with a fork until moist.

  4. Turn dough onto lightly floured surface. Shape into 8-inch circle about 1 inch thick. Cut into 8 wedges.

  5. Place on a greased baking sheet, at least 1 inch apart. Brush with egg whites

  6. Bake at 375 for 15 to 20 minutes or until golden brown
