Fairy cakes with buttercream icing

Recipe Ingredients for Cupcakes

225 g caster sugar
225 g Butter
4 eggs , beaten
225 g self-raising flour
1 tsp baking powder
2 tbsp milk
125 g butter
250 g icing sugar

Recipe Directions for Cupcakes

  1. Cream butter and sugar together, add eggs, flour and baking powder. Add milk to soft dropping consistency.

  2. Add to paper cases in 2X12 hole cake tins, bake for 15-20 mins at 180 degrees.

  3. Once cool, ice with butter icing made by creaming the butter and icing sugar together, with some milk if required.
