Light and delicious cupcakes. Can add up to another 1.5 apple and 1/2 cups chopped nuts if you'd like.

Recipe Ingredients for Cupcakes: Apple

3 eggs, large
1/2 cup canola oil
1 cup sugar
1 teaspoons cinnamon
1 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking powder
1 1/2 apple
1 teaspoon brown sugar

Recipe Directions for Cupcakes: Apple

  1. Preheat oven to 350F

  2. Place 12 muffin liners in a muffin pan and spray with Pam.

  3. Mix the eggs, oil, sugar, cinnamon, vanilla, flour, and baking powder in a large bowl with an electric mixer at medium speed.

  4. Finely cube the apples and mound in the muffin liners.

  5. Pour batter over apples and sprinkle with additional cinnamon and brown sugar. (Add nuts if using)

  6. Bake 20-30 minutes or until a toothpick inserted in cupcakes comes out clean.

  7. Cool on wire rack.
