Cup Custard Recipe

Delicious even when made with egg whites and skim milk!

Recipe Ingredients for Cup Custard

3 large eggs
1/3 c sugar
1/8 t salt
2 cups milk
3/4 t vanilla
1/8 t ground nutmeg
5 T pure maple syrup

Recipe Directions for Cup Custard

  1. Preheat the oven to 325 degrees F.

  2. Whisk eggs, sugar, and salt in a medium mixing bowl until blended.

  3. Heat milk in a small saucepan until steaming.

  4. Gradually whisk the hot milk into the egg mixture and stir gently until the sugar is dissolved. You can then strain the mixture through a sieve, if desired.

  5. Stir in the vanilla.

  6. Pour into five 6-ounce custard cups or ramekins. Dust with ground nutmeg.

  7. Make a bath for the custard: place a dish towel in the bottom of a roasting pan. Place the custard cups on the towel, being careful not to let the cups touch each other or the sides of the pan. Pour scalding hot water in the pan. Place the water bath in the oven, and bake until set, but still a bit quivery in the center, about 40 - 60 minutes.

  8. Let cool 30 minutes. Cover with plastic wrap, and then refrigerate until cold.

  9. Serve with a drizzle of pure maple syrup on each custard.
