Recipe Ingredients for Cumin-Scented Red Quinoa & Black Rice

0.5 cup Black Rice
1 cup dry Quinoa
1/4 tsp Kosher Salt
3 tbsp Olive Oil
1 small Onions
3 clove Garlic
2 tsp Cumin Seed
3 tbsp Lemon Juice, Canned Or Bottled
1/4 cup Coriander Leaves
0.25 cup Parsley
2 tbsp chopped Chives
1 avocado, NS as to Florida or California Avocados
1 fruit without seeds Lemons

Recipe Directions for Cumin-Scented Red Quinoa & Black Rice

Bring rice and 1 cup water to boil in a small saucepan. Cover, reduce heat to low and cook until water is absorbed and rice is tender (25-30 minutes). Meanwhile, combine quinoa, bay leaf, 1/4 tsp salt and 2 cups water in a medium saucepan. Bring to a boil. Cover, reduce heat to low and simmer until quinoa is tender (15 min). Drain, return quinoa to hot saucepan, cover and let sit for 15 minutes. Discard bay leaf, fluff quinoa with fork and transfer to a large bowl. Heat 1 Tb oil in a large skillet over medium heat. Chop onion finely and add to pan; cook, stirring occasionally until soft (8 min). Add garlic and cumin seeds; cook, stirring often, for 2 min. Add to quinoa. Add rice; mix well. Stir in remaining 2 Tb oil, lemon juice, chopped cilantro, chopped parsley and snipped chives (1-in pieces, about 2 Tb). Season to taste with salt and pepper. Cut avocado and lemon into wedges. Serve salad with avocado and lemon wedges.
