Designed for the parishioners of Abyssinian Baptist Church in Harlem, this side is the perfect nutritious alternative to condemn those empty calories for good. Servings adjusted from 4 to 8 to suit diet with more reasonable portions.

Recipe Ingredients for Cumin Roasted Sweet Potatoes

2 1/2 lbs sweet potatoes
2 1/2 tbsp olive oil
1 tbsp ground cumin
1 tbsp ground cinnamon
1 1/2 tsp black pepper
1 tsp sea salt

Recipe Directions for Cumin Roasted Sweet Potatoes

  1. Preheat the oven to 375 F.

  2. Thoroughly wash the sweet potatoes and cut them into chunks, leave the skin on.

  3. Spread the sweet potatoes across a cooking sheet or large roasting pan. Sprinkle the cumin, cinnamon, pepper, and sea salt over the potatoes, then pour the oil over and mix until the herbs and oil are evenly coating the potatoes.

  4. Sprinkle water over the potatoes and place in the oven.

  5. Let them cook 40 minutes, checking every 15 minutes, until nicely browned.

  6. Hint: If potatoes are not organic, scrub skins or peel. It's easier to mix the oils and herbs in a bowl, rather than on a cookie sheet.
