This is my replacement for the traditional roz (rice) that is served with Marinated chicken. It has Mediterrean flavor and goes well with the chicken and spinach.

Recipe Ingredients for cumin quinoa

1 cup quinoa
1 teaspoon olive oil
2/3 cup low sodium chicken broth
1/4 teaspoon cumin
1 salt to taste

Recipe Directions for cumin quinoa

In a non-stick pan heat olive oil. Add quinoa and saute until toasted. Add chicken broth, bring to a boil, then reduce heat and cook until all of the liquid is absorbed.
