Recipe Ingredients for Cucumbers in Yogurt with Mint

4 large cucumber
1 cup (plain nonfat yogurt)
2 tbsp shallots
1/4 cup fresh mint leaves
1/4 tsp salt
1 dash fresh ground black pepper

Recipe Directions for Cucumbers in Yogurt with Mint

  1. Peel the cucumbers and then slice in half lengthwise. Scrape the seeds out of the center. Using a grater coarsely shred the cucumber.

  2. After it is shredded place the cucumber in your hands and squeeze gently over the sink to remove excess water.

  3. Combine the shredded cucumber, yogurt, mint, salt and pepper. Fold together and chill.
