A nice light salad using fresh summer ingredients.

Recipe Ingredients for Cucumber, Tomato & Onion Salad

2 cucumbers
1 medium onion
1 large tomato
1 cup vinegar
2 tbsp olive oil
1 tbsp white pepper

Recipe Directions for Cucumber, Tomato & Onion Salad

  1. Peel and slice cucumbers.

  2. Slice onion in half and then slice very thin.

  3. Break up the cucumber and onion slices.

  4. Slice tomato into thin slices about the same size as cucumber pieces.

  5. Whisk together vinegar, oil and pepper.

  6. Pour liquid over veggies.

  7. Refrigerate for an hour or more.
