refreshing summer salad. add a few olives and its fabulous, but the cc counter computed the olives at about 500 calories over, and since i couldn't fix it, i removed them from the recipe. rocks with or without them. enjoy!

Recipe Ingredients for cucumber/tomato greek style salad

11 oz cucumber
2 1/2 cups chopped tomato
3 green onion
3 radish
3 medium mushrooms
3 oz feta cheese
1 tbs balsamic vinegar
1 tbs red wine vinegar
1 tbs olive oil
1 fresh ground black pepper to taste

Recipe Directions for cucumber/tomato greek style salad

  1. cut veggies,

  2. mix everything in a big bowl

  3. stir

  4. let it sit to absorb flavors for a few

  5. serve chilled or eat right away

  6. yummy!

  7. add some kalamata olives at 45 calories for 5: wonderful!
