I tried this out as I was preparing for my lap band surgery. It turned out to be very tasty and we decided to keep it as a regular occurance.

Recipe Ingredients for Cucumber Soup

5 cups chicken stock
1/2 tsp red pepper flakes
1 tsp cumin
1 tsp curry powder
1 tsp minced garlic
1 tsp onion powder
3 cucumbers, large peeled and diced
1/2 cup 2% milk
1 tsp dried basil

Recipe Directions for Cucumber Soup

  1. Bring stock, milk and spices to a boil. Add cucumber and reduce heat. Allow to simmer for about 20 mins or until cucumber is tender.

  2. Place mixture in blender or food processor and blend until smooth.

  3. Garnish with a dollop of sour cream, a few crisp pieces of bacon or parmesan cheese. (optional)
