This salsa is amazing and all it takes is a lot of chopping. It is a salsa fresca and not at all spicy! Plus its packed with veggies and low in cals!

Recipe Ingredients for Cucumber Salsa

5 large tomatoes
1 large cucumber
1 jalapeno pepper
1 large white onion
2/3 cup cilantro (only use 1/4 to 1/2 of the bunch)
3 tbsp salt

Recipe Directions for Cucumber Salsa

  1. Remove stem and seeds from the jalapeno.

  2. chop all the vegetables and combine.

  3. Add salt to taste, there may be more than 3 Tbsp.

  4. It is best after it's had a few hours in the fridge for the flavors to combine.
