This is great as an open faced sandwich too. I like lots of pepper on mine.

Recipe Ingredients for Cucumber salad

2 cucumbers, very thinly sliced
1 red onion, very thinly sliced
2 tablespoons vinegar or 2 tablespoons lemon juice
2 tablespoons fat free greek yogurt
1 salt and pepper, to taste (I like a lot of pepper)
1/2 teaspoon stevia
1 teaspoon chopped fresh dill

Recipe Directions for Cucumber salad

MIx the cucumber and onion together. Place all other ingredients into a bowl w/lid and give a shake. Add onions and cucumber. Mix well. Chill and serve!
