A nice way to use up all those extra cucumbers from your garden!

Recipe Ingredients for Cucumber Salad

2 cup, pared, chopped Cucumber, Peeled
0.5 cup, sliced Onions
4 oz Low-Fat Sour Cream
2 tbsp Vinegar, Cider
5 sprigs Dill Weed, Fresh
1/4 tsp Sea Salt
1 tsp unpacked Sugars, Brown
1 dash Pepper, Black

Recipe Directions for Cucumber Salad

  1. Peel cucumbers and slice thinly. Thinly slice onions. Place in a strainer over a bowl. Sprinkle with salt and mix thoroughly. Cover with a plate and add a can for weight. Let sit for appx. 1/2 hour to soften and draw out some of the juice.

  2. Drain and rinse cucumbers thoroughly to wash off as much salt as possible. Place in a bowl with remaining ingredients. Mix well and chill for about 1-2 hours to allow flavors to blend.
