A delightful cucumber salad. The ginger is what makes it great. I suggest using fresh (crushed) ginger but you can use the powder ginger, as well. I like the ginger from Trader Joe's that comes in a jar. Add more or less for that spicy ginger taste.

Recipe Ingredients for Cucumber Salad

1 cucumber
3 tbsp vinegar
3 tbsp soy sauce
2 tbsp vegetable oil
1 dash salt
1 dash white pepper
1 dash ginger

Recipe Directions for Cucumber Salad

  1. Peel the cucumber.

  2. Slice down the length, in half

  3. Scoop out, with a spoon, the seeds

  4. Cut each half across, about an inch thick, to make small moon shaped slices

  5. Mix it all together.

  6. Let sit and marinate a couple of hours in the fridge
