A cool side dish, excellent with fried or grilled chicken

Recipe Ingredients for Cucumber Salad

1/2 english cucumber
1/2 red onion, halved and sliced thinly
1 clove garlic
1 pinch salt
1 tbsp dill, minced
1 tbsp vegetable oil
2 tbsp buttermilk

Recipe Directions for Cucumber Salad

  1. Pour boiling water over onion to cover. Let sit for 10 minutes, then drain.

  2. Mince garlic with pinch of salt.

  3. Whisk garlic with oil, buttermilk, dill and pepper to taste. Let rest 15 minutes.

  4. Meanwhile, halve cucumber lengthwise, seed and slice thinly.

  5. Combine cucumber and onion with dressing.
