Recipe Ingredients for Cucumber Salad

1 seedless cucumber
1 tablespoon mirin
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 Salt, to taste

Recipe Directions for Cucumber Salad

  1. For the cucumber salad: Wash and cut the cucumber in half, lengthwise.

  2. Slice into thin half-moons and transfer to a bowl.

  3. In a separate, smaller bowl, whisk together the mirin, sesame oil and rice vinegar.

  4. Season to taste with salt.

  5. Drizzle the dressing over the sliced cucumber and toss.

  6. Refrigerate until ready to serve.
