Delicious (and sweet) cucumber salad.

Recipe Ingredients for Cucumber salad

2 cucumbers, sliced thin
4 tbsp white vinegar
2 tbsp toasted sesame oil
2 tbsp sugar, organic cane
1 tbsp sesame seeds, toasted

Recipe Directions for Cucumber salad

  1. slice the cucumbers very thin, this is so easy in the food processor if you have a slicer blade and the "feeder" top

  2. mix together everything else other than the sesame seeds so the oil and vinegar are incorporated

  3. salt the cucumbers lightly with sea salt and let it sit (in the fridge probably) for about 40 minutes to drain liquid -- the sauce has a lot of liquid as it is

  4. drain the cucumbers and put in the sauce

  5. put toasted sesame seeds on each serving individually
