A cool cucumber salad made with yoghurt of double toned milk. A meal in itself!!

Recipe Ingredients for Cucumber raita

1 large cucumber, peeled, grated
1 cup yoghurt, semi-skimmed, 1.5%
1 salt to taste
1 tsp oil
1/4 tsp mustard seeds
1/4 tsp black beans, dehusked

Recipe Directions for Cucumber raita

  1. squeeze water out of the grated cucumber. (dont discard, drink it up, its delicious!)

  2. add the yoghurt and salt and mix well.

  3. heat oil in a small skillet, add mustard seeds.

  4. when they splutter add the black beans and fry till the beans turn golden.

  5. add to the cucumber-yoghurt mix.
