3 cucumbers
4 tomatoes
2 cups parsley
1/4 cup lemon juice or red wine vinegar
1/2 tsp salt

Peel and seed the cucumbers. finely chop the cucumbers and tomatoes. Mince the parsley. Mix all ing. and refridgerate 2 hours.
